Bebek Fine Dining Restaurant
A 380 m² fine-dining restaurant on the Bosphorus shore. An open kitchen, measured luxury and an experience that choreographs every moment.

On the shore of the Bosphorus, this 380 m² fine-dining space, designed as the signature restaurant of an experienced chef, was composed like a theatre where the food takes the stage. We began the design process by understanding the chef's culinary philosophy and the experience they wanted the guest to have, because a good restaurant space must speak the same language as the menu.
The guest's journey begins the moment they step through the door. A dim, warm entrance was designed as a transitional zone that lets the eye adjust to the view and the open kitchen. On moving into the main dining room, the Bosphorus view and the lively atmosphere of the kitchen greet the guest at once. This first impression sets the tone for the rest of the evening.
The open kitchen was positioned as the heart and visual focus of the restaurant. This area, where you can watch the chef and team at work, was designed like a stage; yet it was supported by technical solutions that separate the sound and smell of service from the dining room. The chef's table in front of the kitchen counter was reserved for special experiences.
The seating was composed in layers to serve different guest groups. Window-edge tables facing the view, niches in more intimate corners and a private room set aside for group dining let each guest live their own experience. The spacing between tables was planned to secure the privacy that fine dining demands.
A measured sense of luxury governs the material palette. Dark timber, veined marble, velvet upholstery and antique brass details create a feeling of elegance without tipping into display. Lighting was perhaps the most critical element of the fine-dining experience: each table was lit individually to show the food and the guest in the truest light. The general lighting was kept deliberately low, creating an intimate atmosphere with candlelight and table lighting.
Acoustic comfort was an invisible but vital part of the project. The acoustic panels in the ceiling, the floor materials and the blind systems allow guests to converse with ease even on evenings when the restaurant is full. This is an often overlooked but indispensable condition of the fine-dining experience.
Over a five-month design and build, every detail — from the technical setup of the open kitchen to the table arrangement — was resolved in coordination with the chef's team. The chef's table, the bar counter and the bespoke seating units in the dining room were made in our own workshop. Bebek Fine Dining became an example of how a space can elevate a dining experience.
